My name is Caroline Fidanza. I own Saltie, a sandwich shop in Williamsburg, Brooklyn. The ship's biscuit it our signature breakfast sandwich, It is a simple sandwich with three elements: fresh baked focaccia, soft scrambled eggs, and ricotta. Before we opened I was just making breakfast for everybody and I made an egg sandwich with what we had in house Sandwich with ricotta and eggs and not much else. Focaccia. And it was delicious. So it was kind of one of those happy accidents. And it just ended up being better than anything we probably would have come up with. It's very beloved by the staff and the clientele.
