Learn how to make your own pasta—no machine required. All it takes is basic pasta dough, a box grater and a little patience.
Making fresh pasta at home can be intimidating, but it doesn't have to be. The version I'm gonna show you how to make doesn't require any fancy equipment. All you need is a box grater. [MUSIC] So, in my bowl, I have some flour, and I'm just gonna go ahead and add a beaten egg . some olive oil, salt; going to sprinkle it evenly over the top and just a little bit of water. I am going to go ahead and take a fork and I'm going to start to incorporate the wet ingredients. and the dry ingredients. It is starting to come together nicely; it's looking a little shaggy. And at this point I'm gonna go ahead and turn it out on my work table. You can see it's looking a little rough. That's okay cuz we're gonna knead it together until it's smooth. Put a little elbow grease into it, get it going, and you'll see it's gonna start to change color. It's gonna become this really beautiful yellow. Look at this dough, it's beautiful! It's got a wonderful yellow hue. It's just supple enough. We're gonna go ahead and let it hang out on the board for about 15 minutes, let it relax. All right, I'm gonna start with one piece of dough and I'm gonna go ahead and grate it on the large holes in my box grater And you're see it start to fall right onto your baking sheet, look at that. You're getting little pieces, you're getting medium pieces, there we go. Give your grater a little shake, and look at this. And now you're gonna let this hangout for about 15 minutes just so it can set. From there you can boil it and toss it with your favorite souse or do what I do and add to meat ball soup.
