Whenever you roast a turkey, it's important to roast it
on a rack. That way all that hot air gets
underneath it. And it browns evenly, and it cooks evenly.
And that's how it stays really juicy. So let's say
you don't have a rack. I have a solution for
you, and all you need is some aluminum foil. [MUSIC]
So, what I am going to do is take a
giant sheet of aluminum foil, like the one I have
here. [SOUND] And I am going to coil it up
in to a rope. [SOUND] Just like that. See that?
You're not gonna jump rope. You're just looking for a
foil rope. And, I'm gonna lay it on a work
surface and then I"m gonna coil it up as if
it were a snake. Like this. Here we go. Or,
a question mark. Go ahead and pop it into my
roasting pan. Just like that. And have my beautiful turkey.
I've rubbed it with a little bit of oil. I've
seasoned it with some salt and pepper. And I'm just
gonna put it right on top of my DIY rack.
Like that. He sits perfectly. He sits evenly. And it's
ready to go into an oven and it's gonna come
out crispy and juicy. Yes! Yes! Look at this bird!
It's golden. It's crisp. It looks super juicy. And I
want to show you this. Look at it. It's brown.
It's crisp. Without this rack this would be pale and
it would be flabby. But it's not. So next time
you find yourself without a rack, don't forget this magical
step.
